Easy Cottage Cheese Lasagna – 267 calories a serving

 This is my first post!  Yay!

Has anyone tried that new Friendship Probiotic Cottage Cheese?  It’s absolutely delicious, and healthy!  Well, my normal supermarket was out of it, so I bought three other brands of non-probiotic cottage cheese.  I hated them all straight, so I ended up with three unused containers of cottage cheese.  So, I figured if life hands you cottage cheese, make lasagna! 🙂  I put together this lasagna last night, and it ended up really delicious!

Forgive the below picture – it was taken today, when the lasagna was leftover and cold.

 

Easy Cottage Cheese Lasagna      
         
Serves 8

Ingredients serving Calories    
         
9 lasagna noodles 2.5 noodles = 210 755    
3 cups 1% cottage cheese 1/2 cup = 80 480    
1/2 c parmesan cheese 1 Tbs = 20 160    
1 cup reduced fat mozzarella cheese 1/4 c = 80 320    
1 jar Newman’s Own marinara sauce 1/2 cup = 70 420    
         
  Total calories = 2135    
  1/8 lasagna = 267    
         
Directions        
         
1) Pre-heat oven to 375 degrees.        
2) Put the lasagna noodles in a big bowl of really hot water for about 10 – 15 minutes,
until they are kind of soft.        
3) While the noodles are softening, in a separate bowl, mix the cottage cheese
and parmesan together.        
4) Spray bottom of 13×9 pan with olive oil spray.      
5) Lay 3 noodles down on the bottom of the pan.  Put 1/2 cottage cheese mixture down
on top of that. Put 1/2 cup mozzarella cheese down. Pour 1/3 jar sauce on top of that.
6) Lay 3 noodles down on the bottom of the pan.  Put the rest of the cottage cheese
mixture down on top of that. Pour 1/3 jar sauce on top of that.    
7) Lay the last 3 noodles down.  Pour the rest of the jar on that.    
Put the rest of the mozzarella cheese down on top of that.      
8) Cover and bake for 40 minutes.  Uncover and bake for 20 minutes.  
9) Enjoy!
