Banana Chocolate Chip Bread for 187 calories a serving

My father in law is sick, and I have very ripe bananas.  When life hands you ripe bananas and sick fathers-in-law, you make banana bread!

  Banana Chocolate Chip Bread for 187 calories a serving
           
  18 servings (6 per mini loaf)        
    Calories per Total    
  Ingredients serving Calories    
           
  1 cup no-sugar added applesauce 1/2 c = 50 100    
  1 c sugar 1 Tbs = 50 800    
  1/2 c egg substitute (I use “All Whites”) 1/4 c = 30 60    
  3 bananas, mashed 1 banana = 110 330    
  1/2 tsp vanilla   0    
  2 c flour 1/4 c = 100 800    
  1 tsp baking soda   0    
  1/2 tsp salt   0    
  1 c choc chips 1 Tbs = 70 1120    
  Garnish        
  one banana, sliced 1 banana = 110 110    
  3 tsp sugar, divided 1 tsp = 16 50    
           
    Total calories = 3370    
    1 slice = 1/6 loaf 187    
           
  Directions        
           
1) Pre-heat oven to 350 degrees.        
2) Mix applesauce, sugar, eggs, bananas, and vanilla together.    
3) In a separate bowl, mix together flour, baking soda, salt, and chocolate chips.  
4) Mix the wet and dry ingredients together.      
5) Spray mini loaf pans with butter-flavored or olive-oil spray. Pour mixture into pans.
6) Arrange the sliced bananas on top.  Sprinkle each mini loaf pan with 1 tsp sugar.
7) Bake for 35 – 40 minutes.        
8) Enjoy!        

P.S.  I got the idea to put the bananas in a really pretty way on top from Cookbook Catchall.
