Chicken and Mashed Potato Casserole: 308 calories a serving

A couple notes about this recipe:
1) I used Unsweetened Original Almond Breeze instead of milk. It’s only 20 calories per half cup, and I think it tastes like cream. Wonderful substitution for milk, and so healthy!
2) I love these Ore-Ida Steam n Mash potatoes. I can’t taste the difference between these and regular mashed potatoes, and they save a ton of work.
3) I really like Tyson diced roasted chicken breast. I have tried almost all brands out there, and this is the only one that I think tastes delicious.

Here are the raw ingredients:

1 bag Ore-Ida Steam n Mash Potatoes 1/7 bag = 80 560  
3 Tbs lt whipped butter (I like Land O’Lakes) 1 Tbs = 45 135

garlic powder 0 0  
1/2 c Almond Breeze milk – unsweetened, original flavor 1/2 c = 20 20  
3/4 c Almond Breeze milk – unsweetened, original flavor 1/2 c = 20 30  
3 slices bacon, cooked and crumbled 3 slices = 70 70  
9 oz cooked, diced chicken breast – (I like Tyson’s frozen) 3 oz = 110 330  
1 can condensed cream of broccoli soup 1 can = 225 225  
1 c Fat Free cheddar cheese 1/4 c = 45 180  
  Total calories =  1850  
  1/6 of pan =  308  

1) Put the broccoli in a big glass bowl and microwave it for 20 minutes. I like to do this at some point earlier in the day, and then just use the cold broccoli in the casserole.
2) Follow the directions on the bag of mashed potatoes (stick the bag in the microwave for 10 minutes). Empty the bag of cooked mashed potatoes in a separate bowl, and mash them with the light butter, the ½ c milk, the salt and the garlic powder.
3) Pre-heat the oven to 350 degrees.
4) Combine the ¾ c milk, bacon, chicken breast, soup, broccoli, and half the cheese.
5) Spray a 13 x 9 pan with olive oil spray. Put the chicken mixture into the pan. Spoon mashed potatoes on top.
6) Cover and bake at 400 degrees for 35 minutes.
7) Remove cover and sprinkle the remaining ½ c cheese on top. Bake for another 10 minutes.
8) Enjoy!

    • Hi Nikki! Almond Breeze Milk is only 40 calories a cup! It comes sweetened, unsweetened, and also in a heavenly chocolate flavor! It is NOT in the refrigerated section, and in my Wegmans it is in the health food section where they have things like organic food and Clif bars and what not. I love this stuff, and I think it tastes like cream, even better than milk!
