Chicken and Cheese Quesadillas for 274 calories each

I need a brown bag lunch for tomorrow, and I really don’t feel like sandwiches.  So, I used my quesadilla maker and made myself a quesadilla for lunch tomorrow.  (If you don’t have a quesadilla maker, you can just bake them in your oven or toaster oven, or you can toast it in a pan.)  The wonderful thing about these quesadillas is that they can be eaten at room temperature, so I can eat them in my car in between meetings. 🙂

Chicken and Cheese Quesadillas 274 calories per quesadilla
Makes 4 quesadillas

1 bell pepper (whatever color you want) 1 pepper = 30 30
1 onion 1 onion = 50 50
8 corn tortillas 1 tortilla = 50 400
8 oz Tyson roasted diced chicken 3 oz = 110 295
4 oz reduced fat mexican shredded cheese 1 oz = 80 320
  Total calories =  1095
  1 sandwich= 274

1) Spray a pan with olive oil spray.  Chop up the peppers and onions, and sauté them in the pan until they are soft and translucent.  Turn heat off.

2) Chop up the diced chicken till they are more bite size than they are now.  Put the chicken in with the peppers and onions.

3) Turn on the quesadilla maker. Put one corn tortilla down on the quesadilla maker.  Put ¼ of the chicken and peppers mixture on the tortilla.  Top with one ounce of the cheese.  Put the other corn tortilla on top.  Close the quesadilla maker.

4) Cook until the cheese has melted and the corn tortilla is crispy.  Enjoy!

    • Hi Sandra! Thanks! Would you believe I take all these pictures with my iphone, because I don’t understand how to get pictures from my real digital camera onto my computer. With the iphone, you just press a button and e-mail it to yourself. It’s great!
