Mashed Avocado Sandwich for 280 calories

I saw this yummy sandwich on the Sweet on Veg website, and I knew I had to try it, so I adapted it to be more calorie friendly.  I LOVE avocado, but I don’t get to eat it very often.  It’s so high calorie!  One avocado has about 280 calories.  So, I used 1/2 the avocado in the sandwich, and enjoyed the sandwich that way.  Avocado is full of  “the good fat”, the heart healthy kind.  And seriously, this sandwich is DELICIOUS!!!  It’s not terribly pretty, but it sure is YUMMY!

Mashed Avocado Sandwich

Ingredients serving Calories
1 Wegmans Kaiser roll 1 roll = 120 120
1/2 avocado 1/2 = 140 140
salt, to taste 0 0
tomato slices 0 0
4 potato chips 1 oz = 150 20
     
  Total calories =  280

1) Slice roll in half.  Put ½ avocado on bottom half of roll, and mash it into the bread a little bit.  I put a little salt on top of the mashed avocado. 

2) Put the tomato slices on top of the avocado, and the potato chips on top of that.  Put the other half of the bun on top, and enjoy!
