Golden Chicken Enchiladas for 236 calories per serving

As you know, I love mexican food, and I subject Michael to it at least once a week.  Last night was that night!  I got this recipe from Eat at Home, and lightened it up a little.  It came out absolutely delicious.  Total creamy comfort food.  It kind of tasted like cheesy chicken and dumplings.  And, since I just had some for breakfast, I can say with absolute certainty – they’re even better the next day! 🙂

Golden Chicken Enchiladas 236 calories per serving
       
Makes 6 enchiladas.

6 oz. chopped onion 1 oz. = 10 60  
2 cloves garlic, minced 0 0  
1 can Fat Free cream of chicken soup 1 can = 175 175  
1/2 cup light sour cream 2 Tbs = 40 160  
2 oz. fat free cheddar cheese 1 oz = 45 90  
7 oz. leftover cooked chicken, diced 3 oz = 110 255  
1/4 c unsweetened Almond Breeze milk 1/4 c = 10 10  
6 flour tortillas 1 tortilla = 80 480  
1 can Fat Free cream of chicken soup 1 can = 175 175  
1/4 c unsweetened Almond Breeze milk 1/4 c = 10 10  
  Total calories = 1415  
  1 enchilada = 236  

1) Pre-heat oven to 350 degrees.

2) Spray a medium-sized pan with olive oil spray.  Saute the onion and garlic until translucent.  Stir in 1 can of soup and the ½ cup of sour cream.   Mix well and take out 3/4 cup of sauce to put into a separate bowl. 

3) Add the chicken and 1/2 cup cheese to the sauce still in the pan. Spray a baking pan with olive oil spray. Fill the tortillas with the chicken mixture, rolling and placing in a greased baking pan. 

4) In the separate bowl, combine the reserved sauce with the milk. Add the second can of cream of chicken soup and extra milk.  Pour this sauce over the enchiladas in the pan.  Sprinkle with the remaining cheese.

5) Bake at 350 degrees for 30-40 minutes or until hot.  Or, cover tightly with foil and freeze.  Label with the instructions, “Thaw in fridge.  Bake at 350 degrees for 45 minutes to 1 hour or until bubbly.”
