Crockpot Unstuffed Cabbage for 273 calories per serving

When you’re dieting, quantity of food becomes real important.  I mean REAL important.  Most of the portions of food are naturally small (or “normal” if you’re a naturally thin person who eats only for hunger reasons).  Portion quantity is why I like this recipe.  It’s naturally low in calories for a big portion of food. 🙂

I chose to use real beef in this recipe.  I usually use fat free ground turkey in place of beef when I am counting calories, but since this recipe is naturally low in calories and my sweet husband has been craving beef lately, I figured what the heck. 🙂

Here’s how it starts out:

Then through the magic of crockpotting, you end up with this scrumptiousness!

Ingredients serving Calories
14 oz. bag shredded cabbage (coleslaw mix) 1 bag = 90 calories 90  
1 lb. very lean ground beef (96/4), broken up into pieces. 4 oz raw = 150 600  
garlic powder and salt, to taste 0 0  
1 onion, sliced 1 onion = 50 50  
2/3 cup instant brown rice 1/2 c = 170 230  
2 little boxes raisins 1 little box = 130 260  
28 oz. can crushed tomatoes 1/4 c = 20 260  
3/4 c water 0 0  
3 Tbs dark brown sugar 1 Tbs = 50 150  
  Total calories = 1640

1) Empty the bag of shredded cabbage into the crockpot first.

2) Layer the rest of the ingredients into the crockpot in the order shown.

3) Cook on high for 2 – 3 hours.  Mix well, and cook another 3 – 4 hours. The longer it cooks, the better.

4) Enjoy!
