I used my lower fat ingredients, and removed the cheese to fit my calorie needs.

  1. Add the chicken breasts to a slow cooker and top with chicken stock. Cover and cook on low for 6 to 8 hours. Shred chicken with a fork and drain most of the liquid.
  2. Stir in the cream of chicken soup, sour cream, and milk until desired consistency is reached. Add black pepper and stir to combine, then taste for seasoning and add salt to taste. Continue cooking over low heat for 30 minutes, or until mixture is bubbly. Serve on sandwich buns with American cheese, if desired.

1) Microwave the broccoli for 15 – 20 minutes, until soft.

2) Meanwhile, prepare the stuffing with the butter.

3) Saute the sausage with the onions and the mushrooms. When the broccoli is ready, mix that in as well.

4) Mix the prepared stuffing in with the broccoli/sausage mixture.

5) Put into a 13’ x 9’ pan. Bake at 400 degrees for 20 minutes.

Instructions
1) Pre-heat oven to 400 degrees. Spray a 13 x 9 pan with olive oil spray. Put broccoli in the pan and cook it for 20 – 25 minutes (or until tender).
2) Once the broccoli is cooked, put it in a large bowl. Mix the chicken, seasonings, sour cream, and cheese.
3) In a separate bowl, mix the cornbread mix, corn, egg whites, and butter.
4) Pour the chicken mixture into the pan. Pour the cornbread mixture over the top.
5) Bake for about 30 minutes, or until toothpick inserted in center of topping comes out clean. Enjoy!

1)      Pre-heat the oven to 350 degrees.

2)     Brown the ground turkey and chopped onion with salt, onion powder, and garlic powder.  When turkey is browned and onion is softened a bit, add the taco seasoning.

3)     Mix the refried beans in with the ground turkey.

4)     In a separate bowl, mix together the cream of mushroom soup and the sour cream.

5)     Spray a 13” x 9” pan with olive oil spray.  Put a little bit of the sour cream mixture on the bottom of the pan. Break up 5 of the taco shells and layer them on the pan. Layer the meat mixture, the sour cream mixture, and half the cheese. Repeat the layers.

6)     Bake for 30 minutes.

7)     Enjoy!

I love New England Clam Chowder. This is an easy crockpot recipe that warms up any cold winter night.

1) Put everything but the cornstarch into the crockpot.

2) In a small bowl, mix the cornstarch with a little bit of water until dissolved.  Then pour the cornstarch mixture into the crockpot and mix well.

1) Pre-heat the oven to 350 degrees.

2) In a medium sized pot, melt the butter on low heat.  Slowly mix in the flour, and cook for 2 minutes.  (Congratulations, you just made a roux!  Yay!) 

3) Slowly add the milk and let the mixture thicken.  Then add the chicken broth and let it thicken again.

4) Take the sauce off the heat, and mix the seafood into the sauce.  Spray an 8” square pan with olive oil spray.  Pour the seafood mixture into the pan.  Top with the shredded cheddar. 

5) Bake for 25 – 30 minutes.  Enjoy!

Smothered Seafood over Cornbread Casserole for 462 calories per serving

This one is SO tasty!  I used the cornbread base from the tamale casserole, and put my own seafood topping on it.  Yummy!  It’s 462 calories per serving, and 10 Weight Watchers points.

1) Pre-heat the oven to 400 degrees.  Spray a 9” x 13” pan with olive oil spray.

2) In a big bowl, mix the first four ingredients. Pour into pan.  Bake for 15 minutes.

3) In the same bowl, mix the next four ingredients.  Pour over cornbread mixture.  Bake for 20 minutes.

4) Sprinkle the shredded cheese on top.  Bake for 5 minutes, or until cheese has melted.

5) Enjoy!

New York Crumb Cake for 408 calories per serving

I had to bake a quick cake for my son’s “Teacher Appreciation Day”.  I certainly do appreciate his teachers, so I wanted to bake them something tasty.  However, on a Thursday night when I don’t feel like shopping, what’s a mom to do?  Well, this crumb cake has never failed me yet.  It’s quick, easy, and oh-so-good!!!

I discovered it at a work party about 8 years ago.  My co-worker made it and I took a bite and immediately proclaimed it the world’s best crumb cake.  To give you an idea – there is 1 1/2 cups of flour in the cake itself, and 2 1/2 cups of flour in the crumbs!!  That’s my idea of a good crumb cake!  When the crumbs are doubly as thick as the cake itself – that’s a good crumb cake!

The recipe is from Sara Foster (as featured on MARTHA STEWART!!!), so you know it’s gonna be good.  I didn’t change a thing in this recipe, because I like to test my lower-calorie versions before I go serving them to people.  Since I already knew this one was a hit, I decided to go with it.  (Every time I have made this cake, someone else has proclaimed it to be the world’s best crumb cake and asked me for the recipe.) 🙂

It’s high calorie though.  If I were going to make changes, I would change the butter to light butter (a savings of 800 calories), the milk to unsweetened Almond Breeze milk (a savings of 40 calories), and instead of an egg, I would use egg beaters (a savings of 40 calories).  These changes would bring the calories down to 334 per serving.

Also, I had to use the picture from Martha Stewart’s website, because I forgot to take a picture of my finished product before it was brought to my son’s school!  But I have to tell you – whenever I make this crumb cake, there are a lot more crumbs than you see in this picture.  Best crumb cake ever.

1) Place rack in center of oven, and heat oven to 325 degrees. Spray a 9”x 13” pan with butter-flavored spray. Set aside.

2) In a medium bowl, sift together 1 1/2 cups flour, granulated sugar, baking powder, and salt; set aside. In a second bowl, whisk together egg, milk, canola oil, and vanilla. Fold dry ingredients into egg mixture.

3) Spread batter evenly into prepared pan, and set aside.

4) In a medium bowl, combine remaining 2 1/2 cups flour, brown sugar, and cinnamon. Pour melted butter over flour mixture, and mix until large crumbs form. Sprinkle crumbs over batter.

5) Transfer pan to oven, and bake for 10 minutes.  Rotate pan, and bake for another 10 minutes, or until a cake tester comes out clean.

6) When the cake has cooled, dust with confectioners’ sugar.

7) Enjoy!
