Chicken Cornbread Casserole

Instructions
1) Pre-heat oven to 400 degrees. Spray a 13 x 9 pan with olive oil spray. Put broccoli in the pan and cook it for 20 – 25 minutes (or until tender).
2) Once the broccoli is cooked, put it in a large bowl. Mix the chicken, seasonings, sour cream, and cheese.
3) In a separate bowl, mix the cornbread mix, corn, egg whites, and butter.
4) Pour the chicken mixture into the pan. Pour the cornbread mixture over the top.
5) Bake for about 30 minutes, or until toothpick inserted in center of topping comes out clean. Enjoy!

Chicken Corn Chowder with Yams for 255 calories

I don’t know about you guys, but I like a nice thick soup, and this soup sure doesn’t disappoint! 

Chicken Corn Chowder with Sweet Potatoes

1) In a medium bowl, mix milk and muffin mix until well combined.

 

2) Spray a large pot with olive oil spray. Add onion and cook until softened, about 8 minutes. Stir in garlic and cook until fragrant, about 1 minute.

 

3) Add chicken broth, chicken, and sweet potatoes. Bring to boil, reduce heat, and simmer until chicken is cooked and sweet potatoes are just tender.

 

4) Stir in milk and muffin mixture and simmer until soup thickens. Add cheese and corn and cook until cheese begins to melt, about 2 minutes. Season with salt, to taste. *Does not freeze well – ruins the texture!

 

5) Enjoy!

Hot Chicken & Rice Salad for 333 Calories Per Serving

This one is not very pretty, but it sure is tasty!  I got the original recipe from Real Mom Kitchen, and revised it based on my own likes/dislikes and calorie limits.   For only 6 points, it made a lovely hot lunch.

1) Microwave the broccoli for 30 minutes until tender.

2) Cook the brown rice according to package directions, except use the chicken broth instead of water.  (Now, for me, the package said let the liquid come to a boil, then put the rice in, cook for 5 minutes covered, then let sit for 5 minutes uncovered.  Mine wasn’t cooked at that point.  Instead, I covered the pot and cooked for about 15 minutes.  Then I let it sit for 5 – 10 minutes uncovered, and it came out perfect.)

3) Combine the broccoli, brown rice, chicken, mayo, and soup.  Spray a 9” x 13” pan with olive oil spray.  Pour the mixture into the pan.

4) Combine the corn flakes and the butter, and sprinkle over the top of the casserole.  Cook for 15 – 20 minutes, uncovered.

Chicken Tamale Casserole for 344 calories per serving

Oh man.  This one is GOOD.  It’s kind of like enchilada chicken on top of spoonbread, all with melted cheese on top.  Absolute perfection.

I got this recipe from The Cookbook Junkie, who got it from Cooking Light Annual Recipes 2009.  Just under 350 calories, and it’s 7 WW points, for those of you who are counting that. 🙂

1) Pre-heat oven to 400 degrees.

2) In a medium bowl, combine ¼ c of the cheese, and the next four ingredients (through corn muffin mix).

3) Spray a 13” x 9” pan with olive oil spray, and pour the cornbread mixture into the pan.  Bake for 15 minutes until just set.

4) Combine the sauce and the chicken breast.  Poke the cornbread all over with a fork.  Put the chicken mixture on top of the cornbread.  Sprinkle with remaining cheese. 

5) Bake for 15 minutes.  Let stand for 15 minutes before serving.  Enjoy!

White Chicken Enchiladas for 416 calories

Here’s a surprise: I love Mexican food.  🙂 

Naturally, when I saw these enchiladas on the Eat at Home blog, I knew I had to make them.  Boy am I glad I did!  They were absolutely fantastic.  Michael loved them and so did I.  These are definitely going into the rotation!  Easy to make and delicious.

White Chicken Enchiladas 416 calories for 1/4 pan!
       
Makes 8 enchiladas (but serves 4)

4 oz. reduced fat shredded mexican cheese, divided 1 oz = 80 320

3 Tbs flour 1 Tbs = 25 75  
1 3/4 c fat free chicken broth 1/2 c = 5 20

  2 enchiladas = 416  

 

1) Pre-heat oven to 425 degrees.

2) Spray a small pot with olive oil spray and saute diced onions until brown and caramelized.

3) Mix together sautéed onions, chicken, and 2 oz. cheese.

4) Put equal amounts of the mixture into each tortilla, roll up, and place seam side down into a 13” x 9” pan.

5) Using the sautéed onion pot, melt the butter.  Stir in the flour and cook until the flour is cooked through.  Add the chicken broth and whisk until smooth and thick.   Turn off the heat and mix in the sour cream.

6) Pour the sauce on top of the enchiladas.  Sprinkle the rest of the cheese onto the enchiladas.

7) Bake for 15 minutes, uncovered.  Enjoy!

Honey Garlic Chicken Pizza for 387 calories

I saw this this recipe at A Housewife’s Tale, and I knew right away that I had to try it.  And boy was I right.  This one was absolutely fantastic!!!

I get the feeling this pizza will be even better when we eat it as leftovers for tomorrow night’s dinner.  This one’s definitely a winner.  YUM.

1) First, make the sauce: In a small pot, whisk together the water, brown sugar, soy sauce, honey, minced garlic, and cornstarch.  When it comes to a boil, turn heat to low and continue whisking until it thickens.  (For me, this happened right away.)

2) Pre-heat the oven to 400 degrees.  Unroll the pizza dough onto a large flat pan. Bake the dough for 6 – 8 minutes, until lightly browned.

3) Spread the sauce onto the pizza dough.  (Now, we only needed to use ¾ of the sauce to cover the pizza.  This will save 25 calories per slice if this happens to you too.  Instead of 387 calories per slice, it will be 363.)

4) Evenly distribute the roasted garlic onto the pizza dough.  Add the chicken pieces and caramelized onions, and finish with the cheese.  Top with sesame seeds.

5) Bake the pizza for 10 – 12 minutes, until cheese is melted and everything is heated through.  Enjoy!

Peanut Noodles with Chicken for 405 calories per serving

Do you see the deliciousness above?  That was our dinner tonight.  Man oh man was this good!!!  It should be called “Comfort Food” instead of “Peanut Noodles”.  SOOO GOOD!!

I got the original of this recipe from Sunday Baker, and boy did she put together a great recipe!!  While I was upstairs with the baby, my sweet husband whipped this up for us. 

We both absolutely loved it, and it’s going into my permanent “Winners” file. 🙂  Plus, the best part: 1/4 of this recipe makes a nice plate full of pasta! 

Peanut Noodles with Chicken 405 per serving

1) Boil noodles until they are cooked.

2) Spray a pan with olive oil spray, and sauté the carrots and onion until the onions are brown and caramelized.  Add in the garlic and sauté for another minute or so.  Mix in the chicken.

3) In a small bowl, whisk the remaining ingredients together until smooth.  Pour the sauce over the chicken and noodles in the pan, and heat over low heat until the flavors are married well.

4) Enjoy!

Ham, Chicken, & Noodle Casserole for 350 per serving

Whenever I can, I try to cook up a casserole in the beginning of the week, and eat from that casserole every day for lunch.  It’s a hot lunch, it’s calorie-friendly, and it’s generally tastier and fresher than frozen meals.  This recipe is this week’s lunch for me.

This casserole is a weird mixture of ingredients, but they all seem to add a lovely overall flavor.  I never think to put cottage cheese together with ham and chicken.  But as weird as it is, it sure tastes good!  Of course, I love cottage cheese, so an excuse to mix it into anything is always good for me. 🙂  The cottage cheese kind of melted into the mixture, so if I didn’t tell you there is cottage cheese in it, you’d never know! 

I think I got the original recipe in one of my Yahoo recipe groups.  I changed it a bit to have a lot less noodles.  Also, I added broccoli.  I always try to add veggies into these casseroles so that I eat vegetables on a daily basis.  And let’s face it, veggies usually taste pretty good if they are in casserole form, so why not? 🙂

The other thing I try to do is use very few dishes.  I hate washing dishes, and that is why I generally make these casseroles in throw-away pans too.

1) In a big glass bowl, microwave the broccoli for 25 minutes.  (I like it soft, not crisp-tender.)

2) While the broccoli is cooking, cook the egg noodles.  When done cooking, drain the egg noodles, and mix with the broccoli in the big bowl.

3) In the pot you cooked the noodles in, melt the butter and saute the onion until it’s a little bit browned.  Add the ham and cook until most of the water is cooked out of the ham.  Add the chicken, and cook for about a minute.  Turn the burner off.

4) Mix in the seasonings, sour cream, and cottage cheese.  Mix the cottage cheese mixture into the broccoli mixture.

5) Turn the oven on to 350 degrees.  Spray a 13×9 pan with olive oil spray.  Put the whole mixture into the pan, and bake for 15 minutes.

6) Put the grated cheddar cheese on top and cook for another 15 minutes.

Cream Cheese Chicken Enchiladas for 325 calories per serving

Yup, you guessed it – it’s Mexican night yet again at our house!  This recipe came out absolutely beautifully!  I got it from Taste of Home.  SOOOOO good!  This one’s definitely going to be repeated at some point in the near future. 🙂

Cream Cheese and Chicken Enchiladas (from Taste of Home)

1) Pre-heat oven to 350 degrees. In a medium sized bowl, mix the cream cheese, chicken, and picante sauce.

2) Put some of the mixture in each tortilla, and roll it up.

3) Mix the salsa and sour cream, and pour on top.

4) Bake for 20 minutes, uncovered.  Put the shredded cheese on top, and bake for another 5 minutes until cheese has melted.

5) Enjoy!

Crockpot Peanut Chicken for 385 calories per serving

Michael and I had a busy day today, and we really haven’t gone food shopping this week.  We decided to try and eat from the stock of food we already have in our fridge, freezer, and pantry.  My crockpot was the perfect solution for such a day! 

This recipe uses ingredients I already had on hand, so I decided to try it.  Boy am I glad I did!  I got the original recipe here.  We both thought it was absolutely fantastic.  It kinda tasted like asian peanut noodles, so I could see where this would be really good over noodles.  It made a really lovely sauce. We had it over polenta.

Crockpot Peanut Chicken 385 per serving

1) Place chicken breasts into the crockpot.

2) In a separate bowl, mix all the rest of the ingredients.  Microwave for 10 -15 seconds if the peanut butter mixture is too hard to mix.

3) Pour the mixture over the chicken.  Mix the chicken and the peanut butter sauce until all the chicken is coated everywhere.

4) Cook on low for 6 – 8 hours.  Enjoy!

UPDATE: Had this yummy leftover peanut chicken yesterday, and it was even better the second day!  I put it over broccoli this time, and it was absolutely fantastic.  Sorry about the blurry picture.
